People’s Choice Award Judging Criteria
Traditional Red Chili Characteristics
There are a few general attributes or characteristics of great chili. The winning chili should excel in all categories and exhibit exceptional balance of flavour, texture and heat.
APPEARANCE
The winning chili should look appetizing. Reddish brown is generally accepted as good chili colour. Chili should not yellow or green (with the exception of Chili Verde).
AROMA
The winning chili should smell rich, complex and pleasant. The aroma indicates what is to come when you taste the chili.
TASTE
Taste, above all else, is the single most important factor. The taste of the winning chili should consist of the combination of the meat, peppers, and spices, with no individual ingredient being dominant, but rather a harmonious blend of the flavours.
CONSISTENCY
The winning chili must have a good ratio between sauce and meat. It should not be dry, watery, grainy, lumpy, or greasy.
FINISH
The finish or aftertaste is the heat created by the various type of chili peppers and chili spices. Again, the winning chili should have harmonious balance between texture, flavour and heat.
